CAULIFLOWER MAC & CHEESE

EASY KETO

Tender roasted cauliflower is the perfect stand-in for macaroni in this delicious low carb recipe!

INGREDIENTS

– Cauliflower – Avocado oil – Kosher salt – Black pepper – Heavy cream – Cream cheese – Cheddar cheese blend –  Unsalted butter – Crushed pork rinds

PREP CAULIFLOWER

Toss the cauliflower with oil, salt & pepper. Roast in the oven.

CREAM CHEESE

Add the heavy cream to a saucepan Heat to a low simmer, then reduce the heat to low.

STIR IN CHEESE

Stir in the cream cheese, cheddar cheese &  butter until the sauce is melted & smooth.

ADD IN CAULIFLOWER

Fold in the roasted cauliflower. Taste & season as desired.

TRANSFER

Transfer the mixture to the prepared baking dish.

BAKE

Sprinkle with additional cheddar cheese & crushed pork rinds. Bake, uncovered, for 12-15 mins!
