Key ingredients
Chicken Breast Meat - Cook your own, or use a shortcut and use shredded or cubed rotisserie chicken. Leftover chicken works too.
Grass-Fed Butter - Used here to cook the chicken. If you're using pre-cooked chicken, just melt the butter and mix it in.
Heavy Cream - Cream adds moisture and richness to the casserole.
Ranch Seasoning - It wouldn't be chicken bacon ranch without the ranch. You can buy the packets of ranch dressing mix, or you can head to your local warehouse store and buy a big jug of it as I did.
Minced Garlic - Mince fresh or use jarred garlic.
Salt - Well-seasoned meals are always the best ones.
Pepper - For a subtle hint of spice.
Cauliflower - Steamed cauliflower adds bulk to the casserole, whereas a non-Keto recipe might use pasta or rice.
Bacon - Cook your bacon crispy and crumble or chop before adding. If it's not crispy, it will get soggy.
Cheddar Jack Cheese - I love how this type of cheese melts into the veggies and chicken. You can use other types as well. Cheddar or even a pizza or Mexican blend will work.
Red Pepper Flakes - Add this at the end for spice and as a garnish. You can leave it out if you're serving kids, just add it to the grown-up's plates.
Fresh Parsley - This is optional, but adds a bright bit of color and a fresh flavor.
Step by step instructions
Mix the ranch seasoning, garlic, salt, and pepper with the cream until well-mixed.
Melt butter in a skillet. Season chicken with salt and pepper and cook until no longer pink.
Transfer chicken to a large mixing bowl. Add cooked cauliflower, most of the bacon, and part of the cheese.
Add the creamy ranch mixture to the bowl.
Stir ingredients together until well combined.
Transfer the casserole mixture to a baking dish.
Top with remaining cheese and reserved bacon.
Bake as directed, until cheese is melted on top and the casserole is warmed through. Broil if desired to brown cheese. Garnish with crushed red pepper and parsley and serve.
Substitutions
Add Any Veggies You Like - Any other cooked veggies that you enjoy can be added to this casserole in place of some cauliflower. Try mushrooms, broccoli, asparagus, or any other keto-friendly vegetables. Just be sure that the vegetables are cooked before you add them in.
Use Any Protein Source You Like - Feel like making this with chopped steak? Go right ahead. Leftover turkey, sausage, or pork would be delicious too.
Storage and make ahead instructions
Refrigerator - You can store this in the fridge for up to 4 days after it's been cooked. The leftovers of this keto casserole are delicious.
Freezer - You can make 2 or 3 of these in an afternoon and store them in the freezer until ready to bake. Make the recipe as directed, but stop before baking. Wrap well and store in the freezer for up to 2 months. I suggest allowing the frozen casserole to thaw overnight in the fridge before baking.

Keto Chicken Bacon Ranch Casserole

- 1 lb. chicken breast cubed (or shredded or cubed rotisserie chicken)
- 2 tablespoons grass-fed butter
- 1 cup heavy cream
- 3 tablespoon ranch seasoning, salad dressing mix 1 oz
- 2 cloves garlic minced
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 cups cauliflower florets ½ head, steamed
- 8 slices bacon cooked and chopped, divided
- 2 cups cheddar jack cheese divided
- Red pepper flakes for garnish (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375 degrees F.
- Melt butter in a skillet set over medium heat. Season chicken with salt and pepper and cook until no longer pink. Transfer to a large mixing bowl.
- Meanwhile, mix the ranch seasoning, garlic, salt, and pepper into the bowl of cream until well mixed; set aside.
- To the bowl with the chicken, add cauliflower, bacon (reserve 2T for the top), 1 ¼ cups cheese, and ranch mixture, stirring until well combined. Add mixture to 9x13 baking dish.
- Top with remaining cheese and sprinkle with reserved bacon.
- Bake for 12-15 minutes, until cheese is melted on top and the casserole is warmed through.
- Broil for 2 more minutes to brown cheese, if desired. Garnish with red pepper flakes and parsley and serve.
