WHAT SWEETENERS CAN I USE IN KETO DESSERTS?
There are so many keto sweeteners to choose from. You can use your sweetener of choice in most keto dessert recipes. We’ve used granulated Swerve and Lakanto.
Just note that the flavor will be slightly different with each sweetener. Maple flavored syrup tends to be mild in flavor while still adding a touch of sweetness.
Some of the most commonly used sugar alcohols are: Erythritol, Sorbitol, Xylitol, Maltitol, Lactitol, and .Mannitol
WHAT FLOURS WORK FOR KETO DESSERT RECIPES
When making keto desserts, you want to stick with low carb flours and starches, like almond flour and coconut flour. Most of our recipes use almond flour but some do use coconut flour.
NOTE that almond flour and coconut flour do not work as a one to one for other flours, and they are not always interchangeable.
Both almond flour and coconut flour absorb more of the liquid ingredients that other flours.
Cassava flour is also a good keto friendly flour, but we haven't worked with it much yet.
WORKING WITH ALMOND FLOUR
Many of our keto desserts use almond flour.
One thing to note about using almond flour is that it is NOT a 1-to-1 for other grain-free or gluten-free flours. It has a lot more protein and fat, and less starch, so it reacts differently in recipes.
It’s best stored in the refrigerator or freezer if you’re not going to use it right away.
Always bring almond meal or almond flour to room temperature before using it.
If you use it cold, it’ll absorb more of the liquid and your keto desserts batter will be thicker than it should be.
WORKING WITH COCONUT FLOUR
Coconut Flour is NOT a 1-to-1 for other grain-free or gluten-free flours. It has a lot more protein and fat, and less starch, so it reacts differently in recipes.
It’s best stored in the refrigerator or freezer if you’re not going to use it right away.
Always bring coconut to room temperature before baking with it.
If you use it cold, it’ll absorb more of the liquid and your keto desserts batter will be thicker than it should be.
