POTATO SOUP

EASY 4 INGREDIENT

This 4 Ingredient Potato Soup recipe is creamy & simple to make. I bet you have the required ingredients in your kitchen right now!

INGREDIENTS

– russet potatoes  –  onion, chopped  – butter – milk – salt & pepper to taste

POTATOES & ONIONS

Add prepared potatoes & onions to large stock pot or Dutch oven. Add enough cold water to cover them.

COOK 

Cook on medium-high heat until the potatoes are tender & fall apart when pierced with a fork.

DRAIN WATER

Remove from the heat and drain most of the water, leaving about a cup of water in the pan.

ADD BUTTER & MILK

Add the butter & milk & using a potato masher, mash the potatoes until they start to break down but not until they are all broken down.

COOK

Return the pot to the stove & cook for an additional 6-7 mins, stirring frequently. Season with salt & pepper to taste, if desired.

SERVE

Remove from the heat & allow the soup to cool for 5-10 mins before serving. Feel free to top this soup with your favorite toppings!
