In a bowl, whisk olive oil, dijon mustard & other marinade ingredients until combined.

Add the chicken thighs to a bowl & pour ⅔ of the olive oil mixture over it. Toss until the chicken is coated.

Let the chicken marinate in the refrigerator for at least 20 mins.

Place the vegetables & sliced lemon in a bowl. Toss with the remaining olive oil mixture.

Pour the vegetables out onto a baking sheet. Nestle the marinated chicken thighs into the vegetables.

Bake the chicken, then broil for 3-5 mins, or until the chicken is browned. Serve immediately!
