KETO EGGPLANT PARMESAN

A classic Italian style comfort dish, Keto Eggplant Parmesan is saucy, cheesy, low carb & delicious!

Cook Time:  50 Min

Ingredients

– eggplant – almond flour – eggs – pork rinds – parmesan cheese – Italian seasoning *all ingredients listed below

Add almond flour to 1st bowl, whisk the eggs & water in 2nd bowl. In the 3rd bowl, whisk the crushed pork rinds, cheese & seasoning.

SET UP DREDGING STATION

Dip the eggplant rounds into the almond flour.

DIP IN FLOUR

Dip the floured eggplant into the egg.

DIP IN EGG

Dredge through the seasoned pork rinds mixture.

FINAL DIP

Set the rounds on a lined baking sheet. Spritz tops of eggplant with olive oil & bake!

BAKE 

To assemble, spread sauce on the bottom of a baking dish, then add a layer of baked eggplant.

ASSEMBLE

Top with more sauce & mozzarella cheese.

ADD CHEESE

Repeat with remaining ingredients, topping with sauce & parmesan cheese.

REPEAT

Bake the Casserole as directed in the recipe card below, until hot & bubbly!
