Heat a stockpot & add olive oil & butter. Add sliced leeks & cook until it starts to brown. Add garlic & cook.

Add potatoes, chicken broth, thyme & bay leaf. Bring the soup to a bowl & reduce the heat to medium-low & cook.

Remove the bay leaf. Use an immersion blender or a food processor or blender.

Return the soup to the pot & add the heavy cream. Season with salt & pepper to taste.
