Place the potatoes & onion into a large stock pot & add enough water to cover the potatoes.

Bring to a boil.

Lower the heat. Stirring frequently, simmer the potatoes until they are soft & start to fall apart.

Remove the pot from the heat & stir until the potatoes start to break apart.

Add in the butter, salt & pepper & stir until combined.
