Pat the chicken pieces dry with paper towels & season with salt & pepper.

In a bowl whisk eggs & heavy cream. In a 2nd bowl, combine pork rinds, almond flour, Parmesan cheese & seasonings.

Dip chicken pieces in the egg mixture 1 at a time, then dredge through the pork rind mixture, pressing to coat.

Working in batches, carefully fry the pieces of breaded chicken for about 5 mins.

Transfer cooked chicken to a paper towel-lined plate to drain. Repeat with remaining breaded chicken.
