KETO GREEN BEAN CASSSEROLE

This is a low carb version of the classic green bean casserole - and it's all made from scratch without any need for canned soup!

INGREDIENTS

fresh green beans  unsalted butter  onion  mushrooms chicken stock heavy cream cream cheese  pork rinds

BLANCH THE BEANS

By placing them into salted boiling water. Transfer to a mixing bowl to cool down.

SAUTE

Melt butter in a skillet. Add the onion & sauté for 3 mins or until translucent.

ADD MUSHROOMS

Add the mushrooms & garlic & sauté for 5 mins, or until the mushrooms are browned.

MIX WITH BEANS

Transfer the vegetables to the bowl with the green beans

ADD BROTH MIXTURE

Pour the chicken broth mixture over the green beans and mushrooms, & mix well.

BAKE

Sprinkle crushed pork rinds over the casserole & bake for 10-15 mins.
