This famous Creole dish has a few adjustments to make it keto-friendly. It is a one-pot, quick & easy meal, with bold & distinctive flavours!

– oil (we use avocado oil) – boneless skinless chicken breasts – raw medium shrimp – cauliflower rice – chicken broth
Heat oil in a stock pot over medium-high heat. Add the onion, bell pepper and garlic - cook.
Add in the remaining ingredients, except the cauliflower rice & stir to combine.
Bring the gumbo to a boil, then reduce the heat to low & simmer for 25 mins.
Add in the frozen cauliflower rice & the cooked peppers & onions & stir to combine.
Turn off the heat and let the keto gumbo cool for 10 mins. The heat will transfer to the cauliflower rice, heating it.
Garnish & serve hot!
