Toss the cauliflower with oil, salt & pepper. Roast in the oven.

Add the heavy cream to a saucepan Heat to a low simmer, then reduce the heat to low.

Stir in the cream cheese, cheddar cheese & butter until the sauce is melted & smooth.

Fold in the roasted cauliflower. Taste & season as desired.

Transfer the mixture to the prepared baking dish.

Sprinkle with additional cheddar cheese & crushed pork rinds. Bake, uncovered, for 12-15 mins!
