– chicken breasts – almond flour – eggs – heavy cream – crushed pork rinds all ingredients below
Season the chicken cutlets with salt & pepper.
Bowl 1 - whisk eggs & cream. Bowl 2 - almond flour. Bowl 3 - combine the pork rinds & other ingredients
Dip each chicken piece into the almond flour, then the egg mixture, and then the pork rind crumbs..
In a skillet heat the avocado oil. Add the chicken pieces to the oil & cook for 2-3 mins, until golden brown.
Transfer the fried chicken to the baking dish. Spread the marinara sauce over each cutlet topped with mozzarella cheese & bake!
Serve over zucchini noodles if you like & garnish with fresh basil & parmesan cheese.
