Notes
Under ripe avocados can be bitter. Make sure to use ripe avocados. Ripe avocados have dark purple skin and feel soft. Overripe avocados have black skin, and feel mushy.
If you have avocados that need ripening, place them in a brown paper bag for a day with the bag closed. To speed up the process, add a banana to the bag.
To make guacamole with frozen avocados, place the bag in the fridge to thaw overnight. If short on time, pour the amount you need from the bag into a bowl and let thaw at room temperature. Should take 25 minutes.
To store guacamole, smooth out the surface into a container until flat and squeeze lime juice over the top until there is a thin layer. This will prevent browning.
Place a piece of plastic wrap over the guacamole and press down until completely covered. Add a lid and store in the fridge for up to 48 hours.
To freeze, add the guacamole to a freezer bag and remove as much air as possible. It can be stored in the freezer for up to 3 months.
