Cottage Fries are crispy on the outside, fluffy on the inside, and perfectly spiced for the perfect side dish to compliment any dinner. Potatoes are a versatile vegetable that can be enjoyed a plethora of different ways.
4large baking potatoescleaned and sliced into ⅓-inch-thick rounds
1teaspoonsalt
½teaspoonblack pepper
¼teaspooncayenne pepperor to taste
3tablespoonsolive oil
Instructions
Preheat oven to 425 F degrees. Line a baking sheet with parchment paper; set aside.
In a large mixing bowl, combine the potatoes, salt, pepper, cayenne pepper, and olive oil.
Stir until the potatoes are evenly coated with oil.
Place potato rounds on the prepared baking sheet, spaced evenly apart, and bake for 20 minutes.
Remove from oven, flip over each potato slice, and return to the oven for an additional 20 minutes, or until they are golden brown and crispy.
Serve warm.
Notes
What kind of potatoes should you use? For this recipe, we used russet potatoes, but you can use any potato type you like.
The thicker the potato slices, the longer they will take to cook through.
Feel free to use any spice blend you like. They would be great with dried thyme, rosemary, Cajun seasoning, or a Greek spice blend.
Storage Tip: These Cottage Fries a best enjoyed warm, but you can store them in an airtight container in the refrigerator for up to 3 days. Though they may lose their crispy texture when reheated.
Storage Tip: Cottage Fries can be frozen for up to 3 months. To reheat, warm them in an oven at 350F for 10-15 minutes, flipping them over halfway through cooking.
