Stewed Potatoes are a traditional Southern comfort food that has been around for hundreds of years. With just a couple ingredients, you can create this creamy nostalgic dish that's both cost effective and delicious!
7medium sized potatoespeeled and cut into 1-inch chunks
¼cupchopped onion
4tablespoonsunsalted butter
1teaspoonsalt
¼teaspoonblack pepper
Instructions
Place the potatoes and onion into a large stock pot and add enough water to cover the potatoes.
Bring to a boil.
Lower the heat. Stirring frequently, simmer the potatoes until they are soft, and start to fall apart.
Remove the pot from the heat, and stir until the potatoes start to break apart.
Add in the butter, salt, and pepper, and stir until combined.
Serve warm.
Notes
We like to use russets, red potatoes, or Yukon’s, but you can use any variety you like.
You can use any variety of onion. We use yellow onion.
When the potatoes start to soften and break apart, the liquid in the pot will thicken. Stewed potatoes will have a similarity to a thick potato soup.
Storage Tips: You can store Stewed Potatoes in an airtight container in the refrigerator for up to 3-4 days, or in the freezer for up to 3 months. Just warm them up in the microwave for 30 seconds at a time until heated through. You can also warm them up in a saucepan over the stove until fully heated through.
Other ways to add additional flavor to this recipe include adding bacon dripping to the potatoes, or sprinkling in fresh or dried herbs like rosemary and thyme.
Or top your stewed potatoes with shredded cheddar cheese, bacon bits, and a dollop of sour cream for loaded stewed potatoes.
