Ingredients

14.5 oz. white beans, drained but not rinsed

red onion
chopped

chopped cilantro

chopped parsley

white vinegar
salt and freshly ground pepper to taste
Instructions
Mix all the ingredients in a medium sized mixing bowl.
Cover and refrigerate for at least an hour.
Serve cold.
Notes
You can use any type of white beans in this recipe.
Fresh herbs work best. Feel free to add additional herbs, if you like.
Store
in an
airtight container
in the refrigerator for up to
5 days.
